Leche Flan
August 26, 2009As a Kapampangan its always a must that you know how to cook… I dont know where people got that idea because I am not a really good cook to start with. Anyway my friend reggie is so she shared her recipe with me … I havent tried it but alot of people did so I am taking their word for it… they say its really yummy.
ingredients for syrup/caramel
half cup sugar
1/4 cup water
procedure:
-combine sugar and water.
-boil down to low heat until caramelize.
-while still not, distribute the syrup to aluminum moulds.
-set aside while preparing for the milk and egg mixture.
Flan ingredients:
10-12 eggyolks
2 cans condensed milk
1 big can evap milk
half cup of sugar
vanilla or dayap rind (optional)
procedure”
-beat eggyoks, add pinch of salt and mix it well.
-add all the remaining ingredients. mix very well.
-gently pour over aluminum moulds with the use of a sifter/strainer for a smoother consistency.
-cover the moulds with aluminum foil and steam for 20-30 mins. you can tell when it’s cooked by inserting a knife-when it comes clean, then it’s done.
-Let it cool and refrigerate.
-serve by turning it upside down on a platter to position the golden caramel on top.
