cooking for the husband
December 4, 2009Well today I will experiment on cooking again. It will be my first time to try the tiramisu recipe that I shared with you all the other day. Its asking for three tablespoons of kahlua liquor but I think I can skip it since there will be kids on the guest list. I will be cooking the tiramisu today since it needs to be in the fridge overnight for the ladyfingers to soak. mmmmm so why am I doing this? I may have the grumiest hubby in the world but I still love ♥♥ him ♥♥ lol it never changes. He may have his moments of being annoying but i just count the times that he is the sweetest! so wish me luck people. I am also making this palabok recipe and just buy some dry ribs from chinatown, its just a family gathering anyway because we are up for a nice week long trip in january to celebrate! viva mexico!! well wish me luck people
easy Tiramisu alcohol free

Ingredients List:
8 large eggs yolks
½ cup Sugar + 2 tbsp to be added to coffee
750g Mascarpone Cheese (cheap version use cream cheese and riccota cheese)
500ml Cream
2 cups strong Espresso Coffee
2 packets Lady Finger Biscuits
Cocoa
Large Lasagne Dish or any deep rectangular serving plate
1.) Whisk the egg yolks and ½ of the sugar together until pale and thick.
simmer on super low stove temperature - the yolk/sugar mixture. Keep on stirring until it thickens like custard (this takes about 7-8 minutes). Set aside to cool and whisk it occasionally as it cools so it is thick and creamy. Place the bowl or mixture over cold water to stop the cooking process.
2.) Stir (not beat) the mascarpone cheese until smooth.
3.) Whip the cream until thick.
4.) Fold the all the cream mixtures together one at a time this will be the Tiramisu cream.(whip cream; mascarpone and egg yolk mixture) set aside
5.)Mix together the coffee and 2 tbsp of sugar. Make sure the sugar is completely dissolved.
Yay Assembly time
Dip lady finger biscuits into the cooled coffee mixture until they are moist and line them at the bottom of the dish.
Layer half of the Tiramisu Cream over the top of the biscuits.
Repeat another layer of dipped lady fingers and Tiramisu Cream. Cover and chill overnight or freeze of three hours if in a hurry. Just before serving dust with cocoa powder or chocolate chunks
